Cooking a chuck roast in the instant pot is my new way to cook and eat pot roast. It was the juiciest and most tender beef roast I’ve eaten in a long time. I forgot how good a pressure-cooked chuck roast is.
It’s very comparable to a slow-roasted beef roast cooked in an oven.
Not only did it taste amazing, but it only cooked for an hour in the instant pot. Roast beef, mashed potatoes, and green peas are my go-to Sunday meals.
I don’t eat it too often in the summer because I’m old-fashioned and don’t like to run the oven for hours when it’s in the middle of summer.
I don’t have to worry about that now. I can just pop the chuck roast into the instant pot at any time of the day and enjoy a nice pot roast dinner on a Sunday in July.
Instant pot chuck roast ideas
Chuck roast isn’t just for making pot roast, you can use them to make instant pot tacos. Cook the roast just like you would for pot roast, but add taco seasoning instead.
All you need is a couple of packs of taco seasoning or homemade taco seasoning and shred the meat. Then pile it high on street taco corn tortillas or wrap the taco beef roast in a soft shell flour tortilla.
You can also make chili in the instant pot with a chuck roast. Cook the roast just like you would for pot roast, but instead of the ingredients, you used to make the pot roast, use chili ingredients: chili powder, paprika, cumin, tomato sauce, onion, garlic, and beans.
This is clearly one of my favorite recipes to cook in an instant pot and definitely the easiest way to make pot roast extra juicy.
Instant Pot Roast Beef

Ingredients
- 1 2-3 lb. Chuck roast
- 1 tsp thyme
- 1 tsp rosemary
- 1 tbsp garlic minced
- 1 tsp beef granules
- 1 tsp salt
- 1/2 tsp black pepper
- 1 onion sliced
- 1 tbsp Worcestershire sauce
- 1/2 cup red wine
- 1/2 cup water
- 2 tbsp olive oil
Instructions
- Combine the thyme, rosemary, beef granules, salt, and pepper in a large bowl and whisk. Add the chuck roast and coat both sides with the pot roast seasoning mix. Heat the instant pot to saute on high for two minutes and add the olive oil. Place the roast in the instant pot and sear each side for three minutes.
- Remove the roast from the instant pot and add the onions, garlic, red wine, and Worcestershire sauce to the instant pot. Stir and saute for 5 minutes. Put the roast back in and pour the water in the instant pot, don't pour directly on the roast.
- Set the instant pot to cook for 1 hour on high pressure. Let the instant pot do a natural release. Remove the chuck roast and let rest for 15 minutes before slicing.
