Cornbread is a must-have staple in my family.  I’ve eaten sweet cornbread with a little butter ever since I can remember.  Mostly on Sundays, but you don’t need a big Sunday meal to eat cornbread.  And it’s not always eaten at dinner time.

Living in the South, we’d often eat corn cakes for breakfast.  In case some of you don’t know what corn cakes are, they’re basically pancakes made with cornbread batter.  They’re so yummy cooked up in a cast-iron skillet with butter and topped with honey or maple syrup.

And we didn’t always eat homemade cornbread, mom mostly opened up a box of Jiffy and cooked it in a hot cast-iron skillet with a little bacon grease/fat.  And I do the same, I don’t always make homemade cornbread and I used Jiffy in this air fryer cornbread recipe.

The air fryer is used for convenience, why mix up a batch of homemade cornbread with a ton of ingredients, just to throw it in an air fryer.  The cornbread came out just as good as if it were cooked in an oven and was great right alongside some greens and ham hocks.

I’ve also eaten it with some spicy homemade chili and it was delicious.  If you want easy cornbread, try air frying it.  You won’t be disappointed.  Pour some melted butter on it and eat just like you would homemade cast-iron skillet cornbread.

Does cornbread need to be refrigerated?

Yes and no.  Cornbread can last at room temperature for a couple of days.  After sitting out at room temperature for 1-2 days, it needs to go in the refrigerator or freezer.  If I’m going to refrigerate the cornbread, I normally throw it in a ziplock freezer bag and toss it in the fridge for up to a week.

If I’m freezing it, I wrap it in plastic wrap and freeze it for up to a month or two.  It’ll probably last longer, but it doesn’t last long in my house.

Does cornbread freeze well?

Yes, cornbread freezes very well.  Homemade or box mixes freeze just fine and there are tons of uses for frozen leftover cornbread. When thawed, it may be a little crumbly but that depends on what mix or recipe you used.  If it’s crumbly, I just throw it in my beans or soup.

What to eat with cornbread?

The short answer is everything, including by itself.  There aren’t too many foods greater than hot and fresh cornbread with melted butter and honey.  Cornbread goes great with lots of soups and stews.  Homemade chili, beef stew, and vegetable soup are all great with it.

I particularly love it with cabbage and Polish sausage and collard greens.  There really isn’t any meal that cornbread wouldn’t be complimentary.  Serving cornbread with lima, pinto, and navy beans is an all-time great.

How to make Air Fryer Cornbread:

Cooking with an air fryer is so convenient.  This air fryer cornbread recipe is so simple, and quick.  It’s as easy as pre-heating an air fryer, mixing up some Jiffy, and pouring in a small 8″ pan.  I use an 8″ cast iron pan and regular round baking pans.

Ingredients
  

  • 1 box Jiffy cornbread mix

Instructions
 

  • Preheat air fryer to 375
  • Mix Jiffy according to instructions on the box
  • Pour the mixture into a small 8" round baking pan
  • Cook for 20-25 minutes until the cornbread is light brown and done in the center. It's done when a toothpick is inserted in the middle and comes out clean.

Notes

Brushing the cornbread at the end will help the browning.
