Pan Seared T-Bone Steak with Bleu Butter Sauce

t-bone steak
1 1/2 thick T-Bone steak
1
tablespoon
butter
1
tablespoon
garlic
minced
3
tablespoons
blue cheese crumbles
cooking oil
salt and pepper
Instructions
Preheat a cast iron or heavy skillet over high heat
Season the steak with salt and pepper
Put enough oil in the skillet to cover the bottom and add the steak
Sear for 6 minutes and flip the steak. Cook for 5 minutes and turn the heat down to medium
Move the steak to one side of the pan and add the butter, garlic and blue cheese to the pan and stir together
Baste the steak for 30 seconds on each side and remove the steak. Pour the sauce over the steak and let rest for 5 minutes before cutting.
Notes
This method will cook a 16 oz. T-Bone to just under medium or close to medium-rare. If you want it medium, baste it for one minute on each side.
