Pan Seared T-Bone Steak with Bleu Butter Sauce

Tender T-Bone steak seared and basted in butter and herbs

Ingredients
  

  • 1 12-18 oz. t-bone steak 1 1/2 thick T-Bone steak
  • 1 tablespoon butter
  • 1 tablespoon garlic minced
  • 3 tablespoons blue cheese crumbles
  • cooking oil
  • salt and pepper

Instructions
 

  • Preheat a cast iron or heavy skillet over high heat
  • Season the steak with salt and pepper
  • Put enough oil in the skillet to cover the bottom and add the steak
  • Sear for 6 minutes and flip the steak. Cook for 5 minutes and turn the heat down to medium
  • Move the steak to one side of the pan and add the butter, garlic and blue cheese to the pan and stir together
  • Baste the steak for 30 seconds on each side and remove the steak. Pour the sauce over the steak and let rest for 5 minutes before cutting.

Notes

This method will cook a 16 oz. T-Bone to just under medium or close to medium-rare. If you want it medium, baste it for one minute on each side.
