Avocado Toast with Egg and Bacon

This avocado toast is a winner in our house. It's good for anytime of the day.

  • 1 large ripe mashed avocado or 1/2 cup guacamole
  • 2 slices sourdough bread
  • 1 large whole egg
  • 2 slices of bacon


  • Preheat a skillet on medium heat and cook your bacon. Remove the bacon after done and lower the heat to medium-low and cook the egg to your liking. Sunnyside up, over-medium or over-well.
  • Toast the sourdough and spread with the mashed avocado or guacamole. Lay the two pieces of bacon long ways on the and then the egg.


You can use any type of bread you want and you can also poach the eggs. Sliced tomatoes taste great on this sandwich.
