This was a beautiful and tasty dish. Asparagus goes really well with bacon. I really liked the smoky flavor the bacon added to the asparagus. It’s a simple stir-fry that makes a great side dish or snack.
We ate this with a lamb steak and mashed red potatoes. The next day I ate the leftover asparagus and bacon stir-fry by itself for lunch and it was very satisfying.
Asparagus and Bacon Stir-Fry
- 1 lb. green asparagus trimmed and cut into halves or thirds
- 2-3 slices thick cut bacon, diced
- salt and pepper
- Stir fry the bacon in a skillet or saute pan until most of the fat is rendered and add the asparagus and stir fry until the asparagus is al dente. Salt and pepper to taste
